medley is the last name of chef/owners Colleen & Wilks — it's also a philosophy.

medley. offers something good, for everyone: modern spins on nostalgic classics, craft cocktails and innovative desserts.

Meet friends and family in our dining room or join us in the bar or either of our two outdoor patios for a laid-back scene, lawn games and spectacular views of Taos Mountain.

The medley. wine shop offers a selection of over 500 wines, spirits and beers. If you’re joining us for dinner, the entire medley. wine shop selection is available to you. We’d love to help you find the pairing for your evening — or for any occasion!

Wilks & Colleen Medley.
chefs/owners

Medley is owned and operated by Chefs Wilks and Colleen Medley. The Chef couple has worked under some of the greatest chefs in D.C. and L.A. honing their skills and unique style, influenced by locales both far and near. Their culinary journey began with Wilks attending the Culinary Institute of America in New York and Colleen studying at Johnson and Wales University in Rhode Island. In 2015, after a decade of city-living, the couple moved to pursue their passions in a community they both love: Taos, New Mexico.

Molly Steinbach.
general manager / sommelier

Molly Steinbach is a Certified Sommelier and Specialist of Wine who joined our team in 2015. She studied at the Elizabeth Bishop Wine Resource Center at Boston University, and moved to Taos in 2011. She writes a monthly wine column for the Taos News, and enjoys curating the selections of wine available both in Medley's restaurant and wine shop.

Richard Pyatt.
sous chef

Richard Pyatt is a Taos native. In his early life Richard discovered his love for food in the Taos High School culinary program. From there he moved to Seattle and trained in some of the best restaurants the city had to offer. Upon his return to Taos he began as a line cook at medley., working his way up to Sous Chef.
